With over 40 years of catering experience, Evelyn leads the kitchen with skill, discipline, and a deep connection to authentic Puerto Rican and Latin cuisine. She is a professionally certified chef, licensed by the Department of Business and Professional Regulations, and holds a Florida Food Manager license, ensuring every menu meets the highest standards of quality and food safety.
Her journey began in New York City, where she founded Heaven’s Gate Caterers in 1986, building a reputation for flavor and consistency. After relocating to Ocala, Florida, she continued that legacy by opening Salsa Boricua Caterers in 1999. Today, she remains personally involved in every menu, bringing decades of knowledge and a passion for creating meals that feel both meaningful and memorable.
